Zoey’s Chocolate Chip Cookies

1/2 cup granulated sugar
1/2 cup packed brown sugar
2/3 cup butter softened
1 large egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
8 oz. chocolate chips

Method:

Preheat oven to 350 degrees. Combine the sugars and softened butter in a mixing bowl and cream together. Cream butter and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla and beat for another minute, scraping down the sides of the bowl often. Mix the baking soda and salt into the flour and add to the butter mixture. Mix until well combined, but do not over mix. Fold in the chocolate chips.

Line a baking sheet with parchment paper and scoop the cookies using a #8 ice cream scoop (this will make very large cookies). Be sure to space the cookies about 6 inches apart. Slightly flatten the dough with a spatula and then place in the oven. Bake for 15 to 20 minutes or until lightly golden. The centers will still be soft. Let cool briefly before removing from the pan. Serve with a tall glass of very cold milk. Enjoy!
